What to look for, if you are choosing your first one: pay attention to how quickly the game gives you a decision that matters. The best short RPGs put a real choice in front of you early — a class, a skill, a branch — because that is what makes the character yours rather than the game's. A questline you simply walk along is a corridor with monsters in it. A questline you make choices along is a story you are in.
The other thing worth knowing is that fantasy is a convention here, not a requirement. Swords and wizards dominate because the vocabulary is shared and needs no explaining, but the underlying loop works in any setting a developer feels like building.
Bring some patience for the early levels. That is where the arc starts.
